Originaly from Dublin, I spent the last 40 years in the restaurant business in different cities through Europe and the United States. I trained as a chef after leaving school back in the late 70’s. Once I had done my apprenticeship, I was off to see the world. From Berlin, Amsterdam, and London, I was hungry to see what everyone was cooking. I arrived in California in 1998 and was lucky to see all the different food cultures in Los Angeles. Moving to San Francisco, I worked as a head waiter in some of the best michelin restaurants in the city. At restaurant Gay Danko I was awarded a Exonn Mobil award for my service and hospitality. At the Progress I was the Matre dé, and this is where I got to see the most innovative food working alongside a great group of professionals. So with the knowledge I have accumulated, I would like to share my passion for food.
