I started waiting tables and very quickly moved on managing some of the best restaurants in the San Francisco Bay Area, including Boulevard, Chez Panisse, Gary Danko and Oliveto.
It was at Chez Panisse where I realized the importance of supporting small, local farmers and work with seasonal products. With my husband Séamus, I took these values with me and opened our own gastro pub in Oakland in 2014. After closing the pub, we were looking to start a new chapter in life and decided to move to Galicia, Spain where we have opened a guesthouse, The Bird and the Bell. We are bringing a little bit of California cooking to Galicia, and through Mesa Única we bring a little bit of Galicia to you.
