Driven by my good nature and for my love of Galicia, I will share with you my country's gastronomic traditions through simple recipes using excellent products from Galicia.
From a very young age, food was at the center of my life and my family. My mother, Julia Roque, opened one of the first cooking school in Spain, bringing to the north of the country many Cordon Bleu recipes mixed with Galicia traditions. Her acquaintances included Chef Arzak, Ferran Adria and more locally in Galicia, Toñi Vicente, our first Michelin star in this region.
Later, I transformed the school to become Mesa Única, with a more diverse objective offering not only cooking classes but a culinary center where friends and family would join around the table to discover new products, wine and new techniques, and just have a good time!
